ah crap. I've just found left over Xmas roast chicken in the freezer. Is it safe to eat?

I had such good intentions of not wasting anything. I stripped off all the last bits of chicken into little strips and packed it into a couple of bags.

would it be safe to leave It in the fridge to defrost for a day then nuke it in a stir fry?

I'd say so, I once cooked pork that was over a year old.

It seemed fine, and nobody died.

Once stuff hits the freezer, I tend to assume it's safe for a long time, definitely longer than 3 months.

Bread tends to acquire a funny texture, but everything else is fine.

I would. I ate a pheasant casserole Thursday which I had made sometime between Christmas and new year

Meat keeps almost indefinitely in the freezer, though the quality would deteriorate after 6 months or so. The meat would become dry and would be better in a pie or slow cooked. Other than that, I wouldn't have a problem with eating it!

We ate the last of the Xmas Turkey yesterday, and we're still alive Grin

(ours was frozen in gravy with the stuffing and heated up thoroughly in the oven though)

It'll be fine. I bag up meat like that and just use it whenever.
