Snazz up my salmon?

Got a nice piece of salmon today, normally would just bake gently with some lemon and whatever herbs I can find.

I want it in a piece, rather than mixed into another meal (though will be some leftovers to do that with). Any suggestions please to snazz it up a bit with store cupboard ingredients? Serve with rice and salad or news and veg, don't mind.

glaze with sweet chilli sauce if you have any.

Or spread a layer of pesto (jar is fine) and grate on some parmesan and bake.

No teriyaki unfortunately. I love pesto but DH doesn't otherwise I would be on that one in a shot!

Might have sweet chilli though.....

Spread a bit of horseradish on and bake in the oven, or put on a bed of finely shredded veg (e.g. courgette, carrot and pepper) add a tiny bit of veg stock and a slug of wine, all wrapped up in foil.

Am doing the same! I'm making a marinade out of hoisin sauce, lemon juice, soy sauce, honey. Pouring over the fish and leaving for a couple of hours. Then fry gently. Serve with rice and steamed broccoli. Yum.

Stir a dollop of wholegrain mustard over your drained baby news & mix well. Helps pep up a side & goes really well with salmon.

Honey, soy sauce and fresh ginger. Cube the salmon and cover in the previous ingredients then grill on skewers. Simmer any leftover ingredients until syrupy and pour over the skewers. It transforms what is nowadays an ordinary piece of fish into something sublime.

Black olive butter

Put butter, black olives, anchovies and black pepper in the small bowl of a food processor. Blitz

Season slamon and bake skin side down while you chill the bitter in the freezer. Put a slice of the butter on top of each piece of salmon

Fantastic marinade courtesy of Weight watchers: lime juice, lemon juice, sesame oil and soy sauce. I think it's half a lime, half a lemon, 1 tbsp each of soy and sesame oil. But I adjust to taste as I go along. It is orgasmic, my mouth is watering just thinking about it. In case its on the tinterweb, it was called Citrus Blasted Salmon.

A simple and tasty way to cook salmon comes from Nigella's Forever Summer - pan fried salmon with a mustard and sugar crust - it really is very nice, and my kids love it.
