Side dishes for aubergine parmagiana suggestions please

I am cooking a meal for my dm and dsf tomorrow for mother's day. Neither of them usually eat veggie so I am determined to impress them! However I am a bit of a novice so suggestions are welcome please.

I will be doing aubergine parmagiana for main which I have cooked before. I would like to add garlic bread and also maybe some sort of green bean salad... How can I make it interesting and filling?

Suggestions for a suitable dessert which would complement this dish would also be greatly appreciated.

Sticking to an Italian theme why not make tiramisu?

lostindubai · 14/03/2015 17:18

Doesn't have to be green bean salad btw but if it was, how could I make it extra tasty?

This is a great website for italian food italianfoodforever.com

If you want more filling you could do a saffron risotto to start.

I made a nice green salad by yotam whatsisface here www.ottolenghi.co.uk/recipes/spring-salad-shop

In sicily a simple but tasty salad is green beans, tomatoes, and potatoes with olive oil salt pepper and some type of vinegar or lemon juice.

That sounds lovely NannyHat

Thanks for the suggestions I am really spoilt for choice here! Love the look of the green salad in your link nanny.

Re desserts I am sadly not a fan of tiramisu, don't like coffee Sad is there anything else I could try along those lines though?

But I would cheat and buy the pudding....put all the effort into the main. Enjoy!

lostindubai · 14/03/2015 20:24

Both these desserts have me drooling Grin does anyone know if I can buy limoncello tiramisu ready made? I don't think I have time to make everything from scratch sadly.

That limoncello tiramisu sounds utterly divine

Charitygirl1 · 14/03/2015 21:52

I always do either cavolo nero or purple sprouting broccoli: boiled for five minutes then fried for 15 in lots of olive oil, chopped garlic and a bit f dried chili.

MoustacheofRonSwanson · 14/03/2015 23:26

The co-op used to do a limoncello dessert, tiramisu-ish type thing. They still might, just don't have a branch nearby now.

Thank you so much to all of you for responding. Dinner was a complete success, and rather delicious (if I may say so! Limoncello was the perfect dessert. Love MN Smile
