Just make a nice cake and your diabetic friend/relative will adjust their insulin dose accordingly. Also cut it into smaller slices.

Type 1 or type 2? Type 1s often choose to wat cake and just need to know the carb counts. A type 2 may be following a low GL diet (like I do) and therefore wouldn't eat cake at all, or just be avoiding refined sugars, or any number of other dietary adjustments.

(I eat small amounts of cake but only when I've made it myself using flaxseed and almond flour. It's rank. )

My preferred situation when it comes to cake is for people just to make normal cake and offer me a slice like I'm a normal person, then not go bright red and stutter "ooh sorry you can't can you" when I say "no thanks, but it looks lovely". Grin

I'm going to go with the "make normal cake, cut into small bits" option.
