Urgent plea - how do i cook a fresh fennel bulb?!?

Any ideas? It's to go with fresh salmon fillets for tea. I'm trying to be all virtuous and go organic, and this arrived in my veg box! Thanks, NSNM x

It will go really well with salmon as it has a slightly aniseedy flavour. You could slice it and drizzle with oil and roast it or braise it or stir-fry it.

can't find it

its something like

pack of cherry tomatoes .. skinned
onion chopped in chunk
fennel chopped in chunk
peppers chopped in chunks
aubergine / courgettes chopped in chunks

put in roasting tin, sprinkle with olive oil, crush a couple of garlic cloves and roast for about 50 minutes until they start to blacken at edges

delicious hot and cold

no need to cook it. if you like crunchy. slice it thinly. dress it with lots of pepper, salt and olive oil.

just to report back, it was a complete success I did the roast veggies suggestion, with the fennel, onion, red pepper, garlic, and sweet potato in with some olive oil, and i had 3 clean plates! (first time in a long time!)

really Twig? In sandwiches? Raw I presume. What would you put with it? I'm quite new to fennel and only ever cook it with fish. Am intrigued

cut in half, roast in oven with olive oil, black pepper, honey ... about 20 mins (cover with foil if getting too brown) -
