Ideas to get sweet potato and squash popular again?

These used to be my total go to when out and about. Would take some cubes of them roasted everywhere as easy meal for DS. Now he has really gone off them and I'm struggling with easy snacky meals.

Used to often have bits and bobs supper of something like oat cakes, cheese, tomatoes, cucumbers some roast squash etc. such an easy meal.

He will have them in things like a veggie lasagne or macaroni cheese etc but only because slathered with cheese.

Any tips would be much appreciated or indeed other ideas for nutritious bits to go on a snacky supper plate (doesn't get much veg at nursery).

What about sweet potato mash/chips/baked?

My 3 year old is usually shattered by tea time so I've been trying to keep it simple so scrambled egg with cheese & tomato or things that are easy to just pick up.

I make a 'hidden' veg sauce and freeze it in batches so there's always something quick & easy. He'll eat anything on a stick too so little
kebabs with a mix of veg?

My two like having carpet picnics and tend to eat more especially if they are tired. I do hummus with carrot sticks etc, pitta's, ham & cheese on sticks, olives... Anything that's easy to eat with your hands.

My DS is a veg avoider. He loves potato chips, no need to parboil, just cut into chips and roast in veg or olive oil for about 20mins at a high temperature

Or I put lots of veg in pasta sauces. Chopped spinach (frozen) goes in everything.

Sticks is a great idea. Tried sweet potato chips every which way and no luck. Even did shoes string fries 3 to 1 ratio with normal potato and he Sussed!

Thick ish soup? With croutons on top and or bread/pitta to dip in.
Make your own wrap...give him chopped up cucumber, pepper, baby corn etc with whatever protein e.g. Sliced chicken breast.

Baked beans occasionally, on half a jacket or sweet potato jacket. (Try removing the skin, see if that helps).
Does he eat rice or stir fry? You can buy plain frozen white rice and add your own veggies, bit like a speedy risotto.

If it's all veg in general that you want him to eat you should google 'the sneaky chef'. My oldest who is 7 is practically meat free. He does eat fish and plenty of fruit & veg but I worry he isn't getting enough vitamins & minerals. There's a recipe on the sneaky chef website for chocolate brownies made with a blueberry and spinach puree. There is no trace of the spinach at all and both my son & husband were fooled.

There's also a sweet potato chocolate brownie recipe on the deliciously Ella website/blog. I haven't made it yet but plan to.

It's not a snacky meal but it makes my life easier because we all eat it so I'm not cooking twice. It's quick, easy, healthy and it is genuinely delicious. My DH and I love it as much as DS (14mo)
