Potato wedges:
Cut the spuds (jackets on) into wedge shapes, brush them (fairly liberally) with olive oil and bung in the oven until they are golden brown and crispy (about 45 minutes, depending on your oven)Take them out, squeeze a wedge of lemon over them and then sprinkle with coarse ground black pepper (I crack mine with a pestle and mortar, but you can just get a filled pepper mill from supermarket) and salt if you like.
Ratatouille a la Greeny - (my rather idiosyncratic recipe)
Take cherry tomatoes (halved), courgettes, mushrooms - really any veg you like, but I think the toms/mushrooms/courgettes are essential. Also essential - a medium-sized onion and a clove of garlic, finely chopped. I like to add peppers to mine too, because they are colourful and taste lovely - other good veg are baby sweetcorn, mange tout, french beans, broccoli - whatever you like. Chop all the veg into bite-sized pieces.
Stir fry in a hot pan with olive oil (1.5tbsp) - add the onion and garlic first, then the mushrooms, then everything else, and fry (keep it moving) until the veg is all sizzling and starting to brown - I would say about 6 minutes. Turn the heat down to medium. Then add a tin of chopped tomatoes, a tbsp of tomato puree, a large pinch of basil, a large pinch of paprika, a pinch of salt, a tsp of sugar (preferably brown, but not important), a good splash of lemon juice and some black pepper. Stir until all mixed and cook, stirring gently but regularly, for another 5-6 minutes. Add a blob of sour cream/creme fraiche to each portion when served.
I quite often use chilli powder instead of the paprika and add chopped fresh red and green chillies before the frying bit - this produces a hot sweet salsa which we love. But if you don't like spicy food at all you could leave out the paprika altogether.
You can also sprinkle it with grated cheese/basil and stick it under the grill for a few minutes, if you are feeling decadent
