Can anyone tell me something nice and not complicated to do with it. Im not big on greens.

Frying pan, wilt it down with a tiny splash of water to stop it sticking, grated nutmeg, cream (if you're not dieting) and serve with fish and potatoes or pasta. Yummy!

I like it just very lightly steamed - for about 2 minutes. Some people then put butter on it.

It's also very good for stir-fries. Throw it in right at the end just about a minute before you're going to take the wok/ frying pan off the heat.

I also use it in a chicken and chickpea dish sometimes, curries, soups, omelettes etc.

Just make sure it's properly washed.

Pancakes (you can buy them if you're not feeling up to making some), wilt spinach down in a pan then mix in some ricotta cheese or some cheese sauce, then place on the pancakes and roll them up. Put half a jar of tomato and basil pasta sauce in the bottom of an ovenproof dish, place the pancakes on top, pour over the rest of the sauce and top with grated cheese. Cook at 180 ish for half an hour. Serve with green salad.

Steam lightly (a la Caligula), mix with ricotta and add shallots fried in butter, season, layer with lasagne and a strong cheese (e.g. gorgonzola, mature cheddar), bake until lasagne done.

Creamy Spinach and Pasta
Metric (Imperial)
500 g pasta, such as tortellini or spirals (16 oz)
30 ml olive oil (2 tbsp )
125 ml onion, chopped (1/2 cup)
3 cloves garlic, minced
250 g spinach, trimmed (9 oz)
1 large tomato, cubed (or half a tin)
50 ml fresh basil, chopped (1/4 cup )
2 ml salt (1/2 tsp)
2 ml pepper (1/2 tsp )
250 ml whipping cream (1 cup )
50 ml parmesan cheese, grated (1/4 cup)

Cook pasta according to package directions; drain and return to pan to keep warm.
In large frying pan over medium heat, heat oil. Add onion and garlic; saute 4 minutes or until lightly browned. Stir in spinach, tomato, basil, salt and pepper. Cook another 5 minutes, stirring occasionally. Stir in whipping cream and parmesan cheese. Cook until mixture comes to a boil. Reduce heat to low and mix in pasta. Cook an additional 4 minutes or until thoroughly heated.

Serves 4

top with toasted pine nuts

& if you don't use it all up it freezes really well (on a tray then transfer to a bag - it does break into little bits though) then you can just bung a handful into any sauces you're making for a bit of extra iron

Frittata. Fry lots of garlic and onions in a pan. Pour boiling water over the spinach, wring out and add to pan. Cook until it mushes down and pop in an ovenproof pan. Beat some eggs, season, pour over spinach and pop in oven at 180° for about 45 minutes. It's yummy and you can add some potatoes if you want to make it a bit more substantial...

lightly steam it, roll into tiny balls then wrap in tin foil and throw in bin. Nasty vile stuff spinach.

soup is easy, nutriious and freezes well.

1 chopped onion, chopped spinach, chicken or veg stock cube, 1 potato chopped, salt and pepper. simmer all together until potato is soft, then blend. add dollop of cream before serving.

Last time I bought spinach I made a lovely spinach and red pepper salad with it.

Whizz the following in a blender, I chopped red pepper, a dash of chilli sauce, seasoning (marigold is best but salt and pepper will do)and either some vinaigrette or olive oil and vinegar.

Just toss the spinach in the dressing and serve. I put this on the table when we were having a party and it disappeared almost immediately!

i also do a salad with spinach - fry or grill some bacon until its crispy and chop into small pieces. Thinly slice a few mushrooms. Toss with the spinach and a vinagerette type dressing
