I've only ever bought breadcrumbs and am totally novice at making them myself.
Can anyone tell me how?
And can I coat food without using egg?

just throw bread in a food blender.
If you don't have a blender you can grate it on the fine side of a grater.
Depends on the food whether you need egg to coat, but mostly it helps.

Not ever done either of those. Sometimes it's best to use slightly stale bread, but I tend to use whatever I have in the cupboard.

I used breadsticks the other night because it was all I had in the house. I blitzed them in the food processor, and the crumbs were lovely and crunchy!

Whenever, we buy fresh bread or french bread, the last bit, the bit you normally chuck, gets cut into cubes and chucked in the blender and then put in a freezer bag with the other breadcrumbs. I made some chicken goujons recently by adding paprika & celery salt to a small bag of b/crumbs and shaking the chicken strips in it. They looked just like Birds Eye ones and I was ever so proud, for chicken you don't need egg, but once you have covered it with the b/c leave it on a plate in fridge for 20 mins, for the b/cs to set on the chicken.
