Freezing cupcakes (un-iced)

Hi,

Does anyone make batches of cupcakes and freeze them? I've got a million and one things to do this coming week, and a SpongeBob cake to make for a friend's son as well as biscuits to make to decorate for Red Nose Day for playgroup, and cupcakes for a Pre-School fundraising nearly-new sale on Saturday.

So I was thinking that I could just make a load of cupcakes and freeze them, then I'd only have to defrost them and decorate them on Friday evening (after I've taken DD1 to Rainbows and got DS off to Cub camp!). And then do the SpongeBob cake!

You can freeze cake, can't you?

Cakes freeze really well. You can do cupcakes and victoria sponge, as long as not decorated. I have also frozen lemon drizzle cake with the syrup on and it was lovely still. I take my mother a banana cake, she slices it and then freezes. She will just take one slice out at a time, more will power than I.

I am doing cupcakes with DD this weekend for a school project. We will freeze them tomorrow then defrost on Wednesday to decorate and take to school on Thursday.

are they in any way compromised compared to fresh? do you just defrost in the fridge overnight?

As long as you don't freeze them for months they will be fine. You can just take them out and leave them to defrost for an hour or so.

I also freeze scones and fruit cake cup cakes, for them I put them in the microwave for 30 seconds and they are ready to eat. Would not do that with cake that I was going to decorate though.
