I would guess to roll in, it helps keep it together when you fry it.

Personally I don't bother with much, I buy mini chicken fillets and coat them in breadcrumbs (blitzed ends from wholemeal loaf I add some garlic and seasoning to the breadcrumbs and then bake them at 180 for about 20 min.

Just roll them in the crumbs before you bake or fry them. No need to put inside the mix.

Another nice way to do chicken is to make 'batter' from flour and sparkling water (there is a fancy japanese name but I cant think of it right now) and just dip chicken pieces in and fry. Very scrummy and very easy.

I added some grated apple to mine the other day and they were very tasty!

Cheeryface, Enid's recipe is great. You mix the breadcrumbs in with the chicken mince and then use the toasted breadcrumbs to coat the mince/breadcrumb/cheese mixture. I don't put garlic in, it tasted too strong.
