Banana loaf/cake

hi - has anyone got a recipe for banana loaf/cake please? it needs to be really simple with the least amount of ingredients poss. i have about a million bananas to use up but not much else in the cupboard!!

my mum makes this loads, will go see if I can find recipe. think it can have raiins in.
I would just make a normal cake and mash 'em in it, but might not be what you are looking for. I am a slap happy cook!!!

have posted mine before but it failed miserably for another MNer, so have added KatyP's recipe which worked for her:

Rub 50g marg/butter into 200g SR .
Add 1 beaten egg,
50g sugar,
grated rind of 1 lemon,
3 mashed bananas.
If mixture is crumbly add a few drops of milk to soften it, but don't make it too wet.
Greased 1lb loaf tin
Reg4, 350F, 180C 45mins


KatyP's recipe:

Beat 100g butter and 150g light brown sugar together in the FP.
Add in 2 eggs and whisk again.
Add 3 ripe bananas, one at a time, and whisk again.
Mix together 225g plain flour, 1 tsp salt, 3 tsp baking powder and 1 tsp cinnamon (optional) and add gradually to the FP.
When it is all mixed up I stir in (by hand) a couple of handfuls of raisins/sultanas.
You could leave these out if you prefer.
Walnuts are optional also (my kids wouldn't eat it with them in.)
Bake at 180 for about an hour.

(NB if actual baking is too daunting overripe bananas are great mashed up with a bit of cinnamon and put in sandwiches, on toast or in plain yoghurt with honey/maple syrup, muesli and/or nuts)

you girls are great!!! seriously i have so many bananas (i over ordered online)Doh!!. reckon i will try katyps recipe and also the idea of mashing with cinammon. DD will turn in to a banana.

this is my gramma's recipe:

1 1/4 cups flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup butter
2/3 cup sugar
2 eggs, beaten
2 mashed bananas
1/4 cup nuts, raisins or whatever (optional)

sift and mix dry ingredients together. beat butter and sugar add eggs. add bananas and dry ingredients alternately. add nuts or raisins. pour into greased loaf pan. bake at 350 for 55 min.

sometimes i put in half brown half white sugar.

right - just been to the local shop and got some baking powder and eggs. i'm about to attempt to make a banana loaf. i will tell you all how i got on later - thats if i'm alive to tell the tale after tasting a slice!

kteepee - just put the banana loaf inthe oven but realised i've used self raising flour rather than plain - am i going to have a disaster on my hands?

This is good one to make with kids as only uses one bowl, no need to rub in fat or anything.

1 pot plain yog. Clean and dry pot to use for measuring the following:

3 pots SR flour.
1 pot sugar.
3/4 to 1 pot vegetable oil.
2 bananas mashed.
2 tsp baking powder.
2 eggs.
Bit of vanilla essence, cinnamon etc if you fancy.

45 mins at about 150 degrees. Fits in a loaf tin or can be done flat like a cake.

right - have just taken it out of the oven and it smells yummy and looks good. have stuck a stick thingy in it and it doesn't appear to be runny or anything (i really am rubbish at this cooking lark!)i'm hoping that it tastes as good as it smells. will let it cool and i'll try a bit and let you know.

Hmmm-I didn't have such great success.
Nothing to do with the recipe but I didn't have any self raising flour so I think I overdid the bicarb and baking powder-loaf looks awesome but tastes bitter-wish I still had a dog-seems such a waste.

Banana bread of my childhood had an almost plasticine texture-really dense-any recipes manage this or was my Mum just lucky (for lucky read crap cook)?

witch ..try Delias banana cake I made it last week and it was just as you described ..not 2 my dh taste but when warmed slightly and with a bit of butter was not 2 bad..I lent book to a mate but will have it back at the weekend if you want the recipe and will post. ( Easy to make !)

Glad it worked out ok - my oven is not working properly so I haven't made it for ages (can only do fairy cakes, etc at the mo) - can't wait to get a new oven so I can bake properly again...

Yep thats it but I did not have any walnuts just an excess of bananas! And I now have another 3 going over so not sure if I try another of these !!
