Fajitas - can they be pre-cooked for a party

We have a lot of people over for dinner in a couple of weeks. I thought it would be nice to do a Mexican meal - chilli & fajita's. However I would really like to be able to prepare / cook most of the food the night before where possible. Has anyone tried pre-cooking fajitas and if so did they still taste nice when reheated ?

I prepare veg/chicken or whatever and put in freezer bags with oil/spices and keep in fridge (overnight if wanted) Only minutes to them cook, would be almost as long to reheat. Can be done whilst dips/chilli/rice/wraps etc go to table.

Yes I guess you are both right. Its just that cooking enough for 20 people will take a while, (especially as I have to do some vegetarian ones as well) & I always manage to set the smoke detector off when I cook them and the kitchen gets all smoky. I might have to rethink my menu.

Cook the filling in the slow cooker then you can get it on early and it's ready to go when you are

I wouldn't - how about tacos instead with chilli and all the bits and pieces.

I just add seasoning and shove them in, I'm afraid. Peppers and red onion take about 25 min in a 180 oven, and I add cherry tomatoes 5 mins before the ends. I have done them with chicken as well, but usually cook it separately as have veggie daughter.
