Any ideas for quick, easy, healthy meals in self- catering cottage?

I tried this in the diabetic section too but only had one response (which was useful)

I hate cooking on holiday so usually eat out a lot then have snacky meals at the rental. Am trying to lose weight, keep sugar levels low so don't want to do my usual junk food eating.

I've got a supermarket delivery but do not want to spend hours chopping, cooking & washing up!

Any ideas apart from salads?

You could take some herbs and spices with you - things to flavour meat and fish.
Buy things like fish and chicken breasts so you can coat them or marinade them.
Then you just need salad and new potatoes
Nothing too much hassle there and all healthy and low GI for diabetes too

Roast chicken. Grilled burgers and salad. Pasta and sauce.

Before the holiday, can you make any "ready meals" to take along? Make them in disposable foil containers (from 99p shop). Shepherds Pies, fish pies, etc.

Get some disposable barbecues. That's all we usually eat on holiday! Prawns, chicken, steak..

When we've booked a cottage we've usually eaten out one night, had fish and chips another, then I've done a stir fry one night with those ready cooked rice sachets that you can microwave, something like sausage and onion baguettes and salad another night and bought quiche plus baked potatoes and salad on another.

Make a lasagne and freeze, it will defrost slowly as you drive down/up and is then effortless to heat up. same for a chilli as then you add rice. homemade pizza although needing cooking is fun, everyone-together cooking and keep lunchtimes to cold food so you only have to cook once a day.

my parents often did camping food (ie tinned chunky chicken with pasta) as it was quick and could be done in one pan, but I realise that isn't everyone's cup of tea!

Thanks for those ideas. I hadn't thought of bringing something frozen.

My mum used to put chunky chicken in ready made vol au vent cases.- the 70s eh!

I am the opposite, i love cooking on holiday as i go to a local market and get loads of fresh fruit and veg and cheese and some flour for pastry or pancakes, and some pasta or rice, and cook lovely fresh meals. Totally love it. Plus i make flatbreads each morning for lunch.

It doesnt take hours though. And whoever doesnt cook does the washing up. Which means not me. Usually chop onions, and then cook and chop at the same time. If you are doing it all, then maybe someone else needs to pull their weight.

Maybe fajitas? Just chop some appropriate veg (peppers, mushrooms, onions etc) whilst cooking off some meat or veggie alternative. Then chuck veg in for the last 5-10 minutes. Serve with wraps and dips. Only 1 frying pan to wash up at the end! x

we mostly eat out, but also used lots more convenience foods on holiday, as it's more of a break that way.

we sometimes buy a rotisserie chicken, and then get packs of prepared veg to have with.

omelette and prepared veg?

bake some fish in foil and serve with pre-made sauce and some rice in a bag?

Take a packet of quinoa flakes and stock cubes with you - follow instructions on the packet and add chopped courgettes and mushrooms. Throw in some kidney beans too - tasty, super nutritious and ready from start to plate in 15 mins.

Thanks for the ideas. I can't imagine making flatbread on holiday I like to be out and about too much. I hate washing up more than cooking so I wouldn't want to swap! I can imagine being more into it abroad withe new interesting ingredients but the local market where we are going is Tesco! I used to like cooking pre-kids but now it just seems another tedious chore like cleaning and tidying.

I hate cooking on holiday too!

The last time we went away I took the slow cooker which made it easier. I made three different meals, Bolognese, sausage casserole and baked potatoes which just involved a bit of prep in the morning and dinner was done when we got back from a day out. We are always out and about as well and there's nothing worse than cutting your day short to get back and cook dinner!

Other meals we have on holiday are simple throw together dinners such as chicken wraps, omelette and different meats and cheeses with crusty bread and salad.
