Sub for Ghee/Clarified butter?

Well I've been to two large supermarkets round here now and both times staff have looked completely blank when I've asked for ghee or clarified butter for a recipe. So I'm guessing I'm not going to get any around here.

Can I just sub normal butter in the recipe or is it not going to turn out right?

Ooo... I did not know that - thanks CD. Is it horribly difficult to do (it does sound rather faffy and I'm struggling to visualise skimming off the layer...)

You could probably use some sort of other oil that had a similar consistency?

The reason to not use normal butter is because the solid bits burn when heated, iyswim.

I would just use veg oil tbh, if you can't be arsed clarifying the butter.

You need an Asian supermarket, or a normal supermarket in an area with a decent Asian population.

well, it won't taste as buttery with veg oil. Maybe you could use a mixture of oil and melted butter and see what happens?

A product called Light Touch is a good substitute. All the main supermarkets stock it.

GeorginaA, ghee is as high in saturated fat as butter! Use sparingly!

tesco here do it they have an asian food section with lots of stuff in big catering quantities too

aviatrixortreat - no E numbers on the label, added vitamins A, D & E, and on the Greenpeace Green list for GM modified foods.

Makes fried mushrooms taste delish and has 75% less saturated fat than butter.

Good enough for me
