coconut flour - anyone have any nice recipes?

I'm moving away from gluten, and coconut flour has been recommended. Does anyone have any nice recipes to share? Thanks

I couldn't get on with it. I just use Doves Farm flour.

Coconut flour drinks liquid, so be careful to add enough or things are very dry/crumbly.

Have you tried Pinterest for ideas. I looked earlier and there seemed to be lots of recipes.

Dr pepper - I haven't yet, that's a good idea.

I have heard you need to add at lot more liquid which is what is making me more nervous about giving it a go!

There are a couple of recipes - choc chip cookies and walnut raisin muffins on the back of the packet if anyone wants me to put them on here. I wanted a few healthier options!

Hopefully we will get a few more replies!

Not so much recipes, as experiences.

It's not like Dove's Farm flours - you can't use it instead of regular flour, even if you get the liquid right. The result is a very fibrous texture, like too much bran.

I find it works well as an additive. A tablespoonful or so added to recipes which would otherwise be a bit floppy or gooey. It seems to help the raising agent give a bit of structure to things. Or to help absorb excess liquid or oil, eg in low carb egg muffins.
