Somebody, please, give me an idiot's guide to pancakes on induction.

I can't seem to get it right Angry

Burned, raw, oily or with a giant burnt part in the centre seems to be my issue.

Using the power setting gets the pan so hot it melts spatulas Hmm but using the temperature setting leaves the pan cold half the time, seemingly.

Yes I have a cheap hob. But really. I just want a step by step guide of what power or temperature to cook them on!

Ok. So don't have the power too hot. I would say medium/low.
Try to use vegetable or sunflower oil as they burn at a lower temp than olive oil.....which isn't good for you when too hot.

Weigh out 4oz plain flour into a bowl and with one egg, make a well in centre. Crack egg into well and slowly whisk together along with 1/2 pint milk, bit by bit.

Once you have a smooth, not too thick batter. Heat a small amount of oil 5-10p big into your pan. Make sure you swoosh the oil around the whole the base of pan once warm.

Then pour just enough mixture to cover base, plus a bit extra for thickness. Make sure it makes a circle then LEAVE and don't touch.

After a minute, check with flat spatula if underneath is golden brown......if yes, put whole spatula underneath and turn quickly to do other side.

Remove and add some more oil.....not too much. If it sizzles too much, turn heat down a bit.

Then repeat. That amounts of mature should make about 6 pancakes in a pan with a 20cm base.

Oops!!!! Didn't read your title properly.....I see you said on induction.
I'm talking about gas but I've had gas, electric and the red ring jobs (crap) and my pancakes are generally ok.....and edible.

Oh well DH made some for me which were better than mine :)

Sorry, I didn't actually read your post properly at all ! I thought you meant you didn't know how to make pancakes at all so gave you a complete guide !

Totally agree. Pancakes on an induction hob just don’t work. I’ve had no problems with anything else in an induction but, as a very experienced pancake maker on a gas hob, I just can’t get them to cook properly. I don’t know why. I’ve tried all ways.

What is the recipe you are using?

I can tell you that if they were raw that the batter was most likely too thick and the frying pan not hot enough.

"a giant burnt part in the centre" IMHO your frying pan was on a ring whic hwas too small for it?
