I was just about to steam a pudding but I have no foil......

No, I don't use veggie suet because it is hydrogenated. I made up my recipe today.....
4oz margarine
4oz sugar
1 x 250g pot of out of date natural soya yogurt
6 oz SR flour - half wholemeal, half white
2 tsps baking powder
some vanilla
I put some runny strawberry jam in the bottom of the basin and steamed it for about 1 hour 20 minutes and it was DELICIOUS!

meant to say, there's a really sneaky way to do steamed pudding in the microwave in three minutes (for when you don't have 1hr 20min) - will post it when I've dug it out

I like look of that recipe TooT. I thought suet was compulsory and I don't like the veggie stuff for similar reasons.

Did it rise OK then? It wasn't too heavy?

I need puddings, especially with a wholemeal element, for my diabetic son. I think I'll try this one.

It was lovely. Maybe not as airy as some but not stodgy like a suet one can be. I put wholemeal flour in all my baking - recipes with all white flour taste really nothingy to me.

Basically tooticky a diabetic diet is a good diet with a low GI. We pretty much do it anyway but now we need to make sure ds has slow release carbs (oats, wholemeal bread or pasta, brown basmati etc) so there's always something for the insulin to work on.

He has to have something decent to eat every 3 hours or so to avoid insulin coma.

(and if anyone happens to need the microwave recipe at any point I'll post it in case - it's basically Victoria sponge mix)

100g SR flour (some or all can be wholemeal), sifted
100g butter
100g caster sugar
2 eggs, beaten
2 tbsp milk

Cream butter and sugar, add eggs a little at a time with spoonful of flour, beating well. Fold in rest of flour, alternating with milk.
Transfer to 1l (1.5pint) pudding basin, cover with buttered foil or greaseproof (I just use a plate).
Steam for 1.5-2hrs or microwave for 4min then leave to stand for 3min.
Turn out onto plate.

You can add raisins, chocolate chips etc, or put a couple of tablespoons of jam, fruit, golden syrup etc at the bottom of the dish.
