What can I doe with Kale?

Had a bag of kale in my veg box this morning and haven't got a clue what to do with it.

Ideas & suggestions gratefully recieved

You can boil it like cabbage - always a nice winter green with sausages and mash, full of iron etc.

However failing that my friends always bought it for her rabbits - they love the stuff

I have struggled and struggled with kale, and found the following options:

  1. Use in place of spinach or spring greens. It's a bit tough though, and can't really be eaten raw.
  1. Use in a lentily sort of soup. This works ok.
  1. Shred it, and fry it with a bit of chilli and lots of fat. This actually works pretty well. You do need a fair bit of fat to make kale palatable, ime. DH said this was by far the best kale recipe he'd had.

Just found a couple of recipes in a lesaflet in my veg box.....I'm not very observent
So here they are if sanyone's interested.

Curly kale pesto:
1 cup of chopped kale
1 & hsalf tsp basil
2-4 garlic cloves
2tbsp parmesan
1/4 cup sunflower seeds
3/4 cup olive oil

blend kale, basil, garlic, parmessan, seeds in a food processor.
With food processor running slowly gradually add olive oil.
season to taste[keeps well in jars in fridge for up to 3 days]

Curly kale and bacon gratin:

12 curly kale leaves
1tbsp olive oil
1 onion chopped
8 rashers bacon cut inton strips
300ml double cream
1/2tsp tabasco
125g gruyere cheese

Plunge kale into boiling water just long enough to wilt
drain and refresh in cold water. drsain again and lay on kitchen paper.
hesat oil and gently saute onion til soft. transfer to bowl.
then fry bacon and add to onions.
Stir cream into pan til thickened then add onions, bacon, kale and tabasco
season and stir over low heat til mixed well.
transfer to oven proof dish and sprinkle with cheese and brown under grill.

Chinese-style:

Boil the kale in a pot of water until soft - the degree of softness/crunch is to your liking, as per broccoli. then heat 1 tbsp of veg oil in a wok (or pot), when hot, add finely chopped clove of garlic. Just before the garlic browns, throw in the boiled kale and stir fry quickly, adding soy sauce/sugar/oyster sauce (preferable but not essential)/water mixture and a dash of cooking wine and sesame oil.

this is rather healthy and brings out the taste of kale. But like broccoli, kale is a bit bitter, so not everyone will like it.

It's a tradition to eat this on Halloween in Ireland with mashed potato and onion. Remove stalks and soak in water in sink with a handful of salt to clean. I prefer to steam, but you can boil it, until soft then chop finely and add to mashed potato and onion. This is known as Colcanon. It is also then traditional to put money wrapped in tin foil into everyone's portion. I don't know the significance but my mum always did this.

I have kale this week too. I washed it and then removed the thick stems from down the middle. I then cut it lngth ways into thinish strips. I then steamed it, with some shredded leeks and balck pepper, in a pan with a tiny amount of water. Cooked it for about 10 minutes or so. Was nice. Had it with sausages and some roasted root beggies.
