Delicious meal made from a roast chicken...

I have just eaten this and it was yummy!

So, after cooking a roast chicken for lunch, this was what I did...

Firstly, simmer the carcass and some of the meat with bay leaves, onion, celery and carrot, add salt and pepper.

Next day I spooned off some of the stock and froze it.

The rest of it I added to chopped potatoes and carrots, added a tin of tomatoes, a tin of kidney beans, some red wine and a bit of tomato purée. Added some of the good meat I'd cut off the carcass, put in oven in a casserole dish, gas mark 4, for about 2 and a half hours. There's probably enough to feed 4-6 people. Delicious!

How big was the original roast chicken? We usually get a 1.2 kg one (approx) and with two adults and a toddler we never have leftovers hence the question. Although it's possible we are all just piglets Grin

It was a big one and for 3 people. Even if you don't make the casserole, you can still make lovely stock with it. Sometimes I've made it and added sausages to it. It's the simmered chicken carcass that makes it taste so nice. You can also add all sorts of veg or pulses to it to bulk it out.

We had roast chicken on Sunday.

Yesterday I made a pie with a leek ( could have used another one), (frozen) mushrooms, cream , stock and chicken . Topped it with leftover mash potato which we also had on Sunday. Had it last night, tonight and there is some left for tomorrow! We had a teeny but of cheese in the fridge so that went on one portion. Easiest leftover meal I've ever done.

Chicken risotto ( using stock from the carcass) would be very easy too. You could also add mushrooms/ peas.

Use the chicken stock to make a creamy sauce, add left over chicken, some peas, mushrooms, brocolli florets, crushed garlic, serve over tagliatelle for a quick tasty pasta dish.

I made chicken chow mein with my left over chicken last night. Coated the chicken in sesame oil, a dash of soy sauce and Chinese five spice. Heated groundnut oil, threw in some peppers, bean sprouts and spring onion, after a few minutes added the chicken and then finally some noodles cook it for about 3 minutes. Another couple of tablespoons of light soy sauce and fry it all off for a further minute. Went down a treat with DH and DS.

I think next next week I'm going to try a chicken and chorizo pie.

Sounds yum! I find home made chicken stock makes all the difference, I made some at weekend that is still waiting to be used so I might make your invention! Smile
