Which is the healthiest oil to cook with?

I've been using extra virgin olive oil for a long time, but have been using rapeseed oil recently. I use low calorie spray oil every now and again too.

Was wondering, as I am starting a healthy eating regime, if there are healthier oils than these?

I don't deep fry, just shallow fry, and use oil in the oven with Mediterranean veg, wedges and roast potatoes.

Heart association has yet to take on the new scientific evidence on the safety of saturated fats, some organisations are slow to respond. You choose your poison - I'd aviod sunflower oil as much as possible too many omega 6s yet I suspect they are still being promoted by heart charities. Have they started recommending eggs yet or are they still convinced cholesterol in eggs causes cholesterol in humans?

God knows. I go along with the idea that to be healthy we need fats in our diet. And that it's best for them to be a more natural form of fat than very faffed about with/artificial. So butter, not marge. Animal fats or cold pressed vegetable/olive oils not one of those weird 'cooking liquids' or oils of dubious manufacture.
