Made roast chicken last night and afterwards ut the carcass (with quite a bit of chicken left on) in the slow cooker and covered it in water and cooked it over night.

I vaguely remember you can get a tasty home made chicken soup by starting it this way but I have no idea what to do next!!

Can you give me the steps to take my slow cooker full of bones and meat and turn it into lush soup!

Chuck in onions carrots herbs etc. let it simmer for quite a while. Then take out the bones and whizz it it in a mixer. Lovely soup or stock
You can add any veggies you want and rice too

Ok, firstly, drain the stock off into a jug then take every bit of chicken left off the bone. Throw away the bones. Chop up onions, garlic, leeks, celery, carrotts and sweat them in a bit of oil, add some herbs and the stock and chicken and let it cook for about 3o minutes and you should have a tasty clear soup.
Or
Do the same until you have sweated off the veg and then add a tablespoon of flour and cook that out for a while, stirring all the time, then add the chicken and stock and cook for about 30 minutes and then blend with a hand blender, season and add a bit of cream for a delicious cream of chicken soup.

Agree with carmenere - but if you can chill the stcok before using it then you can lose the fat from the top - nicer soup

Chinese style chicken soup
make stock as below - chill
soften onions garlic and ginger - add stock and soy sauce (and any green veg (and/or sweetcorn)you fancy) - boil for a bit - add dried noddles and cook for 3 or so mins (depending on the packet). Beat up 1 or 2 eggs and pour in slowly to the rapidly boiling soup - serve immediately

And definitely Suzy, I'll talk to you about sweating and reducing anytime(sorry about the 7th, I had to work)...(in Crete)...(in a five star hotel)......

and ds2 is a very Fussy Eater and the only vegetables he will eat are game chips made of ordinary potato and sweet potato which I make myself. What do you think is the best oil to cook them in?

Peanut oil is excellent for frying game chips.
Actually the food was a bit diaasppointing apart from the fab usual Greek stuff like tomatoes stuffed full of taste, fresh tarama salata, loads of lovely oregano, delicious fresh feta, greek honey and really, really gorgeous honey. I filled my suitcase with olive oil and honey
