A whole camembert to bake, what with it?

I bought a camembert in a terracotta dish in Aldi at christmas and it is now languishing in my fridge. We are supposedly having a lean, frugal Jan (enforced due to inconvenient lack of funds!)

What can I serve with it to make it more of a meal for myself and dh rather than a thing to have with a lovely bottle of red wine that we don't have

Look at the Jamie Oliver baked camembert pasta recipe, its really nice. I added bacon to make it even naughtier!

Score the top of the cheese, bury garlic cloves, chutney, cranberries etc in it before baking and eat with lovely crusty fresh bread and salad - yummy!!!

If you've got some sprigs of rosemary (or a neighbour has a shrub of it in their garden) add some of it with the garlic whilst it is baking.

We're serving a baked camembert for a not-really-a-starter-more-a-filling-crudites thing for four of us this weekend.

So for dipping in we'll have raw veg sticks, some chunks of saucisson and some bread. Plus crisps on the side.

Think of it like an easy fondue - and don't forget to skewer the top and pour a bit of cheap wine or cooking brandy in if you have some lying around!

Thank you all! I would usually just do the skewering the top, adding wine and then baking to serve with bread, celery / carrot sticks etc as a snack or easy starter.

If I served that as a dinner on a Thurs night dh would be expecting the 'main' course to follow!!

I will def look up the Jamie Oliver camembert pasta dish, that sounds very promising. And I have a pack of christmas spiced lardons from M&S picked up for buttons when they were selling everything off after Christmas. I could add them to really make a meal of it

My freezer is really delivering on the treats in this frugal Jan - just found a pack of Aldi mini fresh cream eclairs in there this morning - yay!

Put mushrooms, small new potatoes, bacon, garlic and salt and pepper in an oven dish ( maybe parboil pots.) and put slices of Camembert on top.
Bake for about 20 mins and serve with salad

For when you want a calorie-fest and don't just want the camembert baked in its box as below (although, to be fair, that is certainly the best thing to do with it!), this tart is good.

Prick and part bake a puff pastry sheet.
Spread it with cream cheese into which you have mixed lots of finely chopped spinach (the spinach counters the calories and makes you feel as if it's healthy!)
Fry garlic mushrooms and put these on top of the spinachy cheese.
Put slices of camembert on top and bake until everything is oozing.

It is fab with caramelised red onion chutney. An a large glass of red Wine
