Anyone make Fajitas without the help of Ol El Paso?

I am trying to cut down on the use of packet & jar sauces. Tonught we are having Fajitas, made with a sachet of El Paso Fajita mix (68p). I like this mix as it gives a good coating to the chicken & veg, but ingredients include caramel! Is this substituted with brown sugar? Don't want them sweet.

Anyone got a recipe to share please?

I don't bother with the packets a they are a little spicy for me. I just throw in what I have at home, and add a bit of chilli to DH's bit. I don't like everything coated though, prefer just a hint of flavouring to the veggies (and chicken for DH).

have never used old el paso! You need to make a marinade it can be whatever flavours you like!
orange and honey is nice
paprika cayenne and thyme as a dry rub
olive oil lemon thyme and garlic
Caramel is often used as a colour as much as anything, cook on a higher heat for a shorter time to get a good colour or use soy sauce in whatever marinade you use.

Thank you - Il'l have to experiment. They do like them spicy but need to not be too dry.

We make fajitas by just using onions, peppers, chicken and pureed tomatoes, let it simmer for a good while, and then I add a small amount of the packet stuff, just for a bit of flavouring.

diced onion, red pepper, salt, black pepper, thyme, cumin, tomato puree, lime juice, coriander leaves, hot stuff if you want.

sautee the onions. combine the rest of ingredients minus coriander. add meat. put coriander in last a minute before serving.
