Need a nice veggie meal that I can make then reheat in the evening

Doing a veggie meal for 6 next weekend at a friends as she doesn't have time to cook. Well one of us is veggie but it is probably easier to do one meal than 2. So I need to precook it at home then take it to hers and heat it up. Any ideas? Veggie friend doesn't eat quorn and I can't think of anything interesting (don't want to do pasta).

If it doesn't need to be posh I would just make a bean/lentil chilli serve with dips/salad/tortillas, or a big dish of curry eg sweet potato, chickpea & spinach and serve with rice or naans, and poppadums & chutneys if you like.

Bean chilli is good; you can make a big pot and serve with garlic bread/ salad/salsa and so on, it actually improves on keeping.

What about a shepherds pie? I use lentils and pearl barley in mine instead of veggie mince. There are other brands of veggie mince by the way, does she eat nothing like that at all or is it just Quorn?

Vegetarian curry is always a good bet. Either that, or you could make a vegetarian stew, make up some her herbie scones, don't bake them take them with you rolled out and cut. Heat the stew on the hob then uncover it, put the scones on top and put the stew pot in the oven. I love to blow my own trumpet, this is so good.

I was coming on to say jamies veg korma but I would do ordinary rice and naan too. I recently made this,his sag aloo and his vegetable rogan josh for a large group...went down very well.

This is soooo good and you could make it up the night before then heat in the oven. Always a crowd pleaser.

That all sounds really good. I love korma. Can't see the recipe on his website though?

I just found this on a previous veggie thread. When it says fry each piece of aubergine 3-4 times does it mean take it out and put it back in again several times? Sounds odd.

Just read the recipe nikki - I do like his stuff , and wonder whether he means fry 3-4 slices at a time? - I shall be trying this with courgettes when I have a glut

I was just going to say aubergine parmigiana, served with crusty bread. Or spinach and ricotta cannelloni, butternut squash lasagne?

Check everybody likes aubergine - lots of people don't. I'm a veggie who would be really disappointed to be served up aubergine. I'd try to eat it to be polite, but would really struggle.

Veggie curry with all the trimmings
Veggie chilli with all the trimmings
Veggie tagine with cous cous and salads etc
A lasagne - layer it up and then cook it when you get there

I'm with Remus here, I'm veggie and the only veg I really don't like is aubergine. I also know other veggies who don't like it either.

I'm not veggie but aubergine is my least favourite veg. I too would struggle to eat an aubergine curry and wouldn't enjoy it. It's the marmite of vegetables isn't it?

I'd go with a vegetarian chilli. Good luck
