Muffins - help please?

I bought "Muffins Fast and Fantastic" and made choc chip during the week.

She recommends using veg oil but they came out quite dense and 'oily'. Now maybe I am comparing my efforts to shop bought muffins, but I wondered if any expert muffin makers out there could give me some tips!

I've never known this Gillian - they are always very light for me. Try turning up your oven slightly. And make sure your measurements are very accurate. I always use sunflower oil or corn oil.

I used veg oil. Will try sunflower the next time, thanks.

Oven was lower as it's fan assisted. Will try a bit hotter too

i use sunflower or veg oik whichever I happen to have in at the time. They turn out just the same whichever I use. Mind you the recipe I use allows 4floz of oil to 8 of milk and one egg. I would imagine that a higher ratio of oil to other wet ingredients would produce a slightly greasy texture.

I use melted butter in mine as I think its tastier and gives a richer flavour. Am actually making muffins right now - cheese and onion ones. Made double choc chip this morning and half gone as soon as kids got back from school! Is this the Susan Reimer book? I love it - very reliable

Careful not to overmix muffins,that can make them a bit heavy too.

Yes, that's the one oxocube.

She says to mix for 30 seconds. I reckon I was spot on there!

Be careful not to over work the mixture just fold until just binded, if you over work they'll be dense.

I love this book! Have just made another batch of muffins for dd and her friends to eat after riding - tested one and they are yummy (a little bit of white choc, chopped as I had it to use up and 100g of a chocolate v similar to Toblerone but ordinary bar shaped to easy to chop. Yummy . Am going to experiment with more adult, savoury flavours such as green olive and feta, blue cheese etc. They freeze really well too

I always use veg oil too. I was going to ask about the over mixing thing too, it's the only reason I can think of for the problem you are having.
