What are your favourite soup recipes?

Not-quite 2yo DD2 has developed an obsession with soup. I'm happy to encourage it as it's a great way of getting lots of healthy food and different flavours into her, but I'm running out of ideas. Particularly as I'm limited to mainly thick, smooth blended soups as that's the texture she finds easiest to eat.

So far we've had done roast butternut squash with harissa (she likes spicy food), pea and mint, and assorted root veg with sage. All big hits. Carrot and coriander not so much although still ate it. Tomato and basil - adored it but a nightmare to clean her up afterwards. But I'm getting bored and would like to expand my repertoire, especially into more savoury flavours.

So what do you and/or your DCs like to eat in the way of soups?

Thai butternut squash is my absolute favourite. Fry red thai paste in a dry pan, add cubed butternut squash. Cook 5 minutes, add vegetable stock and cook til the squash is soft. Blitz until silky and smooth, add coconut milk to finish.

fried onions/spring onions, garlic
cooked brown rice, leftover chicken, roasted butternut squash & carrots, raw grated apple & courgettes, seasoning.

puree ingredients with water or stock.

heat before serving, grated parmesan on top, crusty bread & butter on side, if desired.
delicious!

(obviously can be frozen in batches )

though of course no need to be so precise with quantities.

Butternut squash with ginger and a little red chilli.

And vegetable and red lentil.

I have a celeriac in the fridge. Is that soupable? I love celeriac.

If recipes call for feta I tend to substitute goats cheese - tends to be less salty, although equally flavoursome.

Just remembered that I did a cauliflower and cumin soup a couple of weeks ago, it was lovely.

yes it is soupable. what is not recommended though is to cut it into quarters, roast in oven, then after it's done forget about it for days.

I'm sure I've seen cream of celeriac soup somewhere.

Grin Oh dear, I hope it wasn't too grim when you re-discovered it.

I've done some googling and there are loads of recipes for celeriac and apple soup, often with bacon and chestnuts/walnuts. Sounds really autumnal, I think I need a roaring log fire to accessorise it!

anyhow I love chestnuts, must buy some, thanks for reminding me!

another favourite is yellow split peas cooked with rosemary sprigs (in muslin so easy to discard) and garlic.
puree when done, season as serve with thinly sliced then fried chorizo on top. these must be crispy.
yum.

I make celeriac soup all the time. An onion and some bacon then a whole celeriac. Blitz then some cream. Delicious

if I make soup to freeze I puree with rice in so it's done.
if eating that day or next day I might add rice later for more texture

and I'm unashamed to say I love Heinz tomatoe soup. with grated cheese and garlic croutons or garlic bread if possible

I love Heinz Tomato soup too. Although not quite as much as I used to, now they've reduced the fat and salt content Sad

Sweet potato with chilli. Cook cubes of sweet potato, until very soft, in ham stock with a whole chilli in the pan (halved for more punch!). Remove chilli. Whizz, then reheat with a dash of milk or cream. Adjust seasoning. Apply to face Grin
