Storing Victoria Sponge

Hi

Not much of a baker, but decided to bake a Victoria Sponge for DP today. Just made the 2 cakes to put together. Tomorrow I'll sandwich it together and DD will ice and decorate it.

In the past, I have always stored sponge cakes in the fridge - but I've heard I shouldn't be doing this.

I've fully cooled it and put it inside one of those zip lock sandwich bags, and was going to store it at room temperature overnight for it to be decorated tomorrow lunchtime. Will that be OK?

what are you filling it with??

Def right not to put it in the fridge.

If i have one made I usually fill it as soon as it is cooled and store it in a cake tin/ tub on the side, but my kitchen is very cool.

Jam on its own can leak into the sponge, but if you are using buttercream too then I'd fill it now.

Don't put it in the fridge. Cakes, like bread, go stale quickly if refrigerated. They are meant to be kept at room temperature unless you fill them with cream.

I have a cake storage container like this that cost me £1 from Poundland. If you don't have one like that a cake tin or plastic container would do just as well.

I was going to put jam in it and buttercream - but I've run out of butter (and I promised DD she could do it), so was going to buy some tomorrow and do it then.
