Butternut Squash, peel or no peel?

Just wondering what the general consensus regarding this is.

I never bother peeling it for soup or wedges, but my friend thinks that's wrong!

TBH I don't think it matters either way, I just prefer not to have to peel the darn thing as it's hard work:)

I don't bother peeling, just top and tail before cutting into chunks and roasting.

I always peel but I've never tried or heard of not peeling. Is the skin not tough once cooked? I'll certainly avoid it if I can as it's a pain to do.

I always peel it. I couldn't imagine eating the peel actually.. Its easy to peel if you use a potato peeler, using a knife is hard work!

roasting with the skin on I think gives it more texture, without the skin I think it's just a bit mushy, nothing to get your teeth into IYKWIM.

I just blitz it with a blender for soup.

I peel it for soup and casseroles but roast it as an accompaniment unpeeled rolled in spices. It's lovely and the skin goes all chewy and yummy.

Wouldn't advise trying that with pumpkin though - skin much thicker!

Never used a pumpkin apart from halloween so can't help you with that.

RE Pumpkins - I roast them in chunks with the skin on then cut the pulp away from the skin. Find that easier than trying to peel when raw. If not roasting pumpkins then I peel the damn things.

Butternut Squash - don't peel - if going in soup it blitzes up - if going in chunks in a curry or something then it pretty much cooks down and provides a bit of texture (well to be honest sometimes quite a lot of texture - but I'm still not peeling it.)

Squash i tend to cut in half, scrape out the seeds and sprinkle with maple syrup, then scoop out the flesh when its cooked.

Pumpkin for pies or cakes i boil with skin on and then peel it afterwards

I think I would peel it if I was putting it in a casserole, I imagine the skin would fall off and be tough to eat

Again cook the pumpkin/squash in big chunks in the stock and take out and peel, then put back in stock etc and whizz up. It is so much easier.

My favourite soup using bns is ...

bns unpeeled!
red pepper
onion
veg oxo
black pepper (loads of)

I have made it using the raw ingredients and having roasted them first, both works perfectly. I don't weigh/measure, just stick in what I've got and wing it.

If using a soup maker I put it on smooth setting, in a saucepan I bring to boil and simmer till all the bns is cooked and then blitz it with a hand blender.

I was going to start this conversation yesterday! I made a butternut squash and chickpea curry last night and I didn't peel- It has revolutionised my life -skin is actually nice! So much easier too, the amount of times I have nearly chopped my fingers off trying to peel BNS with a knife. NEVER AGAIN!

I love the skin on BS once roasted. So yum! I blend it down for soups too, or just leave it on for anything else!
