or toast, beans and egg

Pasta bake with 1 onion, 6 rashers of bacon, 1 passata, Italian dried herbs, a bit of double cream and a can of berlotti beans. Some cheddar bits out of the freezer sprinkled on the too. Rich and delicious. Left overs cold for Monday lunchtime.

I then use the left over cream to pour into a can of fruit salad to go with value ice cream for pudding.

Frittata! Chop up some cooked potatoes, tomato, spring onions and wilted spinach (or other vegetables), mix with 2 eggs per person and some grated cheese, pour into a frying pan, allow to set and then finish off under the grill. Serve in generous wedges with salad or beans.

Not everyones taste, but we love chicken livers and lambs kidneys both really cheap- do in a tomato sauce if wanted, with couscous.
Tomato sauce with pasta
Bubble and squeak with bacon and/ or eggs
Cauliflowers are cheap here at the moment ( 50p on our local market) so cauliflower cheese and jacket potato

agoodbook · 26/10/2014 19:12

I forgot my favourite - corned beef hash! :)

Allalonenow · 26/10/2014 19:22

I've got lots of vegetables to use up ATM, so I'm going to be making capponata and puttanesca sauces for pasta, not sure if that's how to spell them, hopefully my cooking is better than my spelling!

Also agree about offal, cheap and tasty, love liver and onions with mash, and also eggs make a cheap meal, pasta carbonara or a spanish omelette.

Egg fried rice ( with any veg and frozen peas( is often a cheap end of month staple here. Cook rice, cool rapidly, abs fry with some veg and give spice, add an egg or two and peas - done. A splash of soy perfecta it.

Soups are popular too- red lentil and country veg being my cheap favourites.

fredfredsausagehead1 · 26/10/2014 20:29

I make a lot of Dhaka chickpea curry
Home made pizzas

Allalonenow · 26/10/2014 21:41

Oh yes, I often have egg fried rice for a quick hot lunch, works well with left over broccoli too.

I also like asian style noodle soup, any leftover veg, stock either homemade or from granules, some noodles, some slivers of garlic and ginger if you have them, a splash of soy sauce, shredded chicken, beef or pork or whatever you have, tasty and cheap.

Sausage casserole with chickpeas and plenty of vegetables is cheap too, make it spicy with Moroccan spices and serve with cous-cous, quick and filling.
