Help! Massive courgette/marrow - what to do with them?

I have very kindly been given two ginormous courgettes/marrows (1.5kg each) by a neighbour. Any bright ideas for what to do with them? I have lots of people coming over for Sunday lunch this weekend and I'd like to cook one as a side dish but not sure how to make it taste of something!?

I made a nice marrow and stilton soup when I forgot to check on my courgettes for a while! TBH, it didn't taste hugely courgette-y but it was nice! Not sure about a side dish though…

You could stuff with a rice, mushrooms, onions, tomato mixture, top with plenty of cheese and bake, slices would make a good side dish for a large number of people.
I like them stuffed with a bolognese type sauce too.

My favourite courgette side dish recipe:

Cut up into pieces (strips or cubes, better if each piece can possibly have a bit of skin on)
Add it to olive oil, garlic, salt and pepper in a roasting tray
Put in quite a hot oven until it starts to go golden brown at the edges
Sprinkle with parmesan and leave in oven for another 5-10 minutes.

If you have a BBQ, you can use that too but I don't recommend sprinkling parmesan on it!

Thanks - all sounds great! Allalone I'm planning on using one next week with a Hairy Bikers recipe that involves stuffing them with a bolognese-y filling and smothering in cheese.

I guess I'm just wondering whether I could do something more simple with the other one e.g. bake/roast as an accompaniment to a roast dinner.

Or maybe I should give up and put it in a cake!

A friend of mine also makes courgette bread the way some people make banana bread too but I've no idea of the recipe. It's delicious though!

Yes, just chop it up into large chunks add a glug of oil and roast it, I'd add some cloves of garlic (whole not chopped) or some halved shallots, and give it a good squeeze of lemon just before serving.

Or chop it up, quickly fry for a few brief minutes in oil or butter, let it go cold, then bag up in portions to freeze and use in soups, pasta sauce, ratatouille.

Courgette and cheese muffins are lovely too.

chocolate cake with courgettes is nice. or you can fry with some garlic, olive oil and mixed herbs

I ribbon mine with a veg peeler and heat it on the stove with lemon juice and peel salt pepper garlic and oil also add anything else like spinach I have laying around and use it as a side or stick chicken etc on top. Also seen a lot of muffins using courgettes
