How do I make sushi?

i tried it for the first time in my life about a month ago - it's gorgeous. But expensive to buy! How do I make it?

go sainsburys to buy sushi rice and seaweed and the rolling mat and the instructions are on the back.... that is what i do!

You need to buy "sushi grade" fish from a special source, i.e. not from your local fishmonger (usually) and deffo not from Sainsbury's or other supermarket. Had conversation about this with Japanese friend. She said she was once invited to a dinner party by an English couple who made sushi especially for her benefit. The English host mentioned she'd bought the fish from Sainsbury's. My Japanese friend ate it out of politeness but was terribly worried about doing so--really needs to be absolutely fresh and superior quality to be eaten raw. This Japanese friend literally travels out to some outer edge of London to find this special fish. So that's my only caveat, sorry, though I know the paraphenalia is easy enough to get hold of these days, as are recipes. I agree it's gorgeous, and so expensive in this country. I tend to get my fill in the US where it's reasonably priced. I've never had the confidence to make it myself. I think of it as sort of something chefs are trained for years to do, so the idea intimidates me. But it certainly can be done, and people do it at home, and they do it well, so good luck.

how mad - to make sushi for a japanese guest! should have been roast beef and yorkshire pud.

We have made sushi at home and been served it by japanese friends. its quite do-able and a good laugh - we even had a roll your own party!

You can get japanese sticky rice, seaweed, wasabi and pickled ginger from delis, world food type places. Get the nicest soy sauce you can too, it makes a difference. The critical thing is getting the consistency of the rice right, you need vinegar (i think its rice wine vinegar) and sugar. Obviously the fresher the fish the nicer it will be but california style versions with avocado and cucumber are nice too.

You don't need fish! Raw fish is sashimi and not always used in sushi.

we've been making sushi ourselves for 6 years with store bought fish and no problem! You can use prawns too.
