How do you scale a fish?

Went shopping this morning and bought a whole sea bass for supper tonight. The guy behind the counter didn't ask me if I wanted it prepared (as they usually do) so (in between dealing with a newlt vagccinated child still crying) I just ttok it. Anyway it is as it was when it came out of the sae. Now I know how to gut and clean but what is the easiest way to remove the scales? I started to try by scraping a knife over them but it is only removing a few and those are flying all over the kitchen. Help.

Oh, I was going to say "ask the fishmonger to do it". Do you need to scale it? I don't eat fish skin so have no idea.

BBC food site says you are already doing the right thing but suggest you do it in a plastic bag to catch all the bits.

Very amusing twig . Well I tried in a bag but couldn't really see what I was doing so went back to my original way and had an almighty mess to clean up. Hope dh appreciates it.

you're doing it right - just scrape the knife along and rinse them off. do it in the sink but be prepared to keep finding them for a few days. can I come to tea? I love sea bass. If you've got the whole thing you can make a really good stock from the head and bones - boil up with salt, pepper, celery. strain, reduce, add a slosh of pernod - totally gorgeous.

I seem to remember some really clever way of doing it with the metal top of a beer bottle but now can't recall how it was done

so really I'm no help at all but thought I'd post anyway!

Oh good idea about the stock. Im doing it with soy sauce,honey,sesame oil and finely chopped fresh ginger, wrapped in tin foil and baked in oven. Really looking forward to it.
