Can I Stirfry Beetroot?

Can I shred/grate beetroot and stirfry it? Does it need a lot of cooking?

(No matter what I do with beetroot, it always ends up undercooked, ime ...)

Yes, well, that's inevitable with beetroot. The only option that avoids everything being pink is the "throw out the beetroot" one.

Piffle, have you stirfried beetroot?

It doesn't really need any cooking - very similar texture to carrot when grated. I put some in a bolognese sauce the other day - just chucked it in near the end like I do with grated carrot - worked quite well.

See, I did beetroot with cream, mustard and smoked haddock, and didn't like it that much. It was orange beetroot, but I don't think that makes a difference ... the sweetness of the beetroot with the mustard etc was a bit weird.

Maybe a regular gratin would be ok, though ...
