Help! Leg of lamb confusion

Hi, I'm cooking two legs of lamb, marinated overnight in oil, lemon, garlic mint etc. Sort of following nigella's saffron lamb but without the saffron. Confused by cooking time and temp..... She says 1 hour 10 mins at 220, packaging from waitrose says 2hr 45 mins. Both legs about 2.1 kg....
What should I do?! Hoping to eat at 1.30........

I would go by the packaging as cooking time is calculated by the weight. Nigella's lamb may have been smaller than yours

They would still be raw in the middle if you follow Nigella's recipe. I have found that her recipes aren't always accurate and would follow the packaging instructions.

So if I follow packaging timings what temp should I go for.... Packaging went in bin yesterday!! Shock

What temp does the Waitrose packaging say? 220 seems rather high for 1 hr 10 mins. Usually you would start at a high temp for 20 mins or so then lower.

Oh, and thank you!

I do 20 minutes plus 15 minutes per pound for lamb. That's for rare, 20 minutes per lb for medium. Recipe sounds delicious - have a great Sunday dinner!

TheGonnagle · 05/10/2014 10:17

Yup, forgot to say 200 for 20 and then down to 180 for the rest.

Nigella always underestimates, her medium rare is blue. Not helpful for today but at some point buy a meat thermometer, they are brill.

www.roastingtimes.com/ I tend to use the guidelines on here and calculate it each time.
