Can you freeze roasted veg? or does it go yucky?

stupid question probably but I have a lot of veg in my fridge that will go off unless I cook it today... so was thinking of doing a huge amount of roasted veg and then freezing it in son size portions for emergency dinners - do you think it will freeze well or will it just mush?? need your expertise please!! thank you x

Blanch it all, then freeze, then you can roast when needed.

Or make a big veg soup and freeze that.

genius idea with the blanching..... will turn the hob on right now... not sure squash, carrot, courgette and pepper soup would test nice but will make some of that too...thanks for your help

Well, I am a bit of a non cook but I think you plunge them into boiling water for a very short time, not to cook them, just to.... err... blanch them?! I will look for a link to Delia or something, or hope someone with more of an idea comes along!

roast them up, and turn in to a pasta sauce using sieved to matoes and garlick or similar. You could them use this as a base for soup or just on pasta, on chicken, or fish
