Where am I going wrong? (Banana Loaf/Cake)

Using this recipe, checking after 30 minutes and still wobbles! So tonight's attempt was in for nearly an hour and I've just tried some and whilst it's nice it feels more like a steamed pudding, would be perfect with custard!

But it wasn't what I was aiming for! Any one know where it went wrong?

the proportions are all wrong.

there is far too little flour! should be 225g at least.

I use Mary Barry's recipe its more like a cake very easy and yummy

That recipe looks similar to Mary Berrys, it is very well done on outside to get inside cooked

You aren't doing anything wrong apart from not reading the comments, and even that shouldn't be a necessity Smile The timings on this recipe are wrong, all the comments say it needs at least 45 minute in the oven, some cook for an hour. It is delicious by the way, we've used that recipe a few times.

Oops! I didn't even realise it had comments (was reading it on my tablet!)

It is very nice, just wasn't the texture I was expecting :)

I don't think the proportion of flour is wrong as such. It's essentially a sponge cake with added banana which makes it very moist.

I've made that and it was quite nice and light but took about 50 mins to cook!

I made this banana loaf last week!! It actually turned out okay but I didn't bake it in a loaf as don't have one, I baked it in a square small dish (not sure what the technical name is for it sorry!) It was really yummy Smile we also had it with custard one night which was heaven.

Oh and also we only used 1 and a bit bananas (and added in choc chips Wink )

you often need a bigger tin that you might think for loaf cakes....

ime they rise really well, so although it looks like there's not enough mix, it always fills up

if you use a smaller tin then the outside gets over done before the middle is done and then you get the doughy more puddingy effect.

I usually use mary berry's recipe and in a 2lb loaf tin.

They were very ripe, very smushy.

I think you could be onto something about the tin size Catsmamma it did look like the tin was not big enough for the amount of mixture.
