Those of you who work from home - what do you make yourself for lunch?!

I've really got into a rut, mainly because while I plan evening meals, I kind of forget I need to eat at lunchtime. Today I opened the cupboard and had the exciting choice of having a cheese toastie, yet again, or heating up a tin of vegetable soup. (Unenthused, I ended up buying a salad at Tesco instead, clearly I can't do that every day though!)

What can I do that doesn't need too much forward planning and doesn't mean I spend ages in the kitchen, but is a bit more interesting and healthy.

My current lunchtimes tend to be:

  • cheese toastie
  • poached egg on toast
  • reheated canned soup
  • baked potato, cheese and beans although I haven't mastered the art of actually doing a single baked potato in the microwave so it isn't rock hard and unpleasant
  • leftovers from last night's meal.

I'm not this incompetent with food for evening meals. Please inspire me!

My 'regulars' are....

  • Various salads with ham, smoked fish, beans, tuna or whatever else is to hand
  • Omelettes - especially Spanish-style or Frittata using leftover spuds
  • Home-made soup. (I'll make enough for a few days and refrigerate)
  • Sandwich made with leftover roasts

Toasted bagel
Pitta with hummus
Goats cheese salad
Beans on toast
Cheese on toast
Cheese & crackers
I get bored of bread but if I just change the bread to a wrap it seems to keep it more interesting. Often with tuna mayo but enjoy cheese & beetroot too.

I don't work from home (SAHM) but eat a homemade lunch everyday and I often struggle for ideas if I'm having something different to DS.

I'm like you OP in that I meal plan our evening meals and lunch tends to be a bit of an afterthought.

Regulars here are...
Omelettes. Either plain or with ham. If I can be arsed and I feel like eating crap I fry some chips with it too Blush
Pasta. In a simple, homemade tomato & basil sauce or with tuna.
Chicken drumsticks in a BBQ sauce and left to go cold.

Have you tried the frozen jacket potatoes that go in the microwave? I didn't think they'd be that nice but they come out surprisingly crispy with a fluffly inside. Perfectly fine with beans or leftover chilli.

I usually have a big salad, with lettuce, cucumber, celery, plum tomatoes, olives, pickled onions, mackerel or tuna.

I eat the ramen noodles from the Asian section of tesco a lot! Add spring onions, mushrooms, maybe some prawns. Quick and tasty.

The frozen baked spuds are brill. And they're also a great quick tea for kids on days when there's after school activities.

These ideas are brilliant thank you! Ooo I hadn't thought about frozen baked potatoes - I'd completely assumed they'd be rubbish (after all ... how hard can it be to bake a potato... ?! Except that I completely fail to bake one in an appetising way using a microwave Grin)

Chipping: I know what you mean... I think in retrospect I was thinking that when I was a SAHM there was more time to plan lunch (in reality, probably not!!) whereas as a WAHM I feel like I'm still on the clock.

Got absolutely sick of sandwiches when I worked in an office, but great idea about wraps - that'll make it more interesting and won't add to prep time. Can you freeze wraps or do they just end up as a solid lump in the freezer?

I think I'm printing this thread out and sticking it on the fridge for last minute inspiration!
