Recipes that can be adapted as both veggie and meat at once!

I'm a veggie but DH is not. We have generally got around this by falling into the habit of not eating the same meals. However, this is annoying, can be expensive and with DD coming up to weaning age soon I'd like us to make more of an effort sitting at the table together eating meals.

DH is happy to not have meat for a few meals a week eg. macaroni cheese etc and we do have a few recipes that we can have together with a meat option such as:

Sausage and mash with veggie sausages/pork sausages
Jacket potatoes with toppings of choice
Burgers and veggie burgers
Pasta with bolognese sauce (if I manage to get round to making a big batch of meat sauce to freeze in portions) or tomato/cheese sauce
Stir fry with just veggies and noodles or with prawns added
Fajitas- just veggie or with chicken added
Roast dinner- I usually just have the veg and yorkies, occasionally a veggie option like a tart and he has beef/lamb/pork
Omelettes with different fillings

Just wondered if anyone was in a similar situation and had any other ideas!

How about ready made puff pastry sheet, do one half with red onion chutney topped with goat's cheese and the other half the same but top with bacon bits or cooked chicken? Serve with rocket salad, tomatoes etc

Chilli
Sausage casserole
Boston beans (serve with bacon/sausage for meataton)
Cannaloni

Thank you for these ideas! Like the puff pastry idea. I actually just saw in Tesco they have a three bean casserole mix in their prepared veg section for about £1.40, ready to put in slow cooker or pan, was thinking that would be good with maybe sausages or pieces of beef added for DH and without for me.

Fry curry paste, onions, add coconut milk, tinned tomatoes if you like.

Split into two pans and add chicken/meat/fish to one, with veg, cashews, paneer/quorn bits/tofu to the other.
