Anybody got a recipe for wild plum jam?

Just wondering how much sugar and whether we will need extra pectin? They are very tart plums!

I'll just go and look it up in my old Good Housekeeping book TT. There's bound to be one.

You don't have a good recipe for chocolate and orange cake do you? (DDs birthday request.)

This comes from a very old book which has a recipe in it for biscuits called nignogs.

6lbs plums
1.5 pints water
6lbs sugar.

Wash fruit, cut in halves, remove stones and remove the kernels. Put the plums, kernels and water into a pan and simmer gently for about half an hour, or until really soft. Add the sugar. Stir until dissolved and boil rapidly until setting point is reached. Pot and cover in the usual way.

Note: Alternatively, cook the fruit without stoning, remove the stones with a slotted spoon while the jam is boiling.

Spidermama, the basis for the following recipe isnot mine so I must credit The CakeScoffer book by Ronny of Animal Aid andsay that I thoroughly recommend buying acopy because the recipesare lovely. It's only 19 pages long, costs£1.25 andtherecipesare inspired. buy one here
So, as I am a non-profit making organisation I should now be free to carry on:
10 oz plain flour
3 heaped tsp baking powder
2 oz cocoa
8 oz demerarasugar
1 cup oil (I use sunflower)
10 fl oz water or 8 fl oz water & 2 fl oz soya milk
1 medium banana, mashed
(and for your dd the zest of a lovely organic orange)

  1. Preheat oven to gas mark 5/190c.
  2. Mix dry ingredients, then add the others and mix thoroughly (although I wouldadvise going cautiously with the liquidas you don't necessarily need it all).
  3. Bake in 2 x 8" tins for 40 mins orall in one tin fora bit longer. Leave to cool in tin asit can be delicate.
Then add some kind of icing involving chocolate, the juicefrom the orange, margarineand a bit of icing sugar. Or get creative with silken tofu anda blender (excuse compoundwords - thespace bar isnot well at present)

could you post the recipe for nignogs as my great grandma used to make them and she unfortuanately passed away and we couldnt find her recipe book.
