Light meals for children

My DD is 3 and goes to nursery in the morning while I'm at work. She has a hot meal there at lunch time (chicken curry, pasta, roast dinner etc) and I pick her up after she's eaten.

I'm struggling with what to give her for her tea though. More often than not she doesn't want another big hot meal but I don't want to just give her sandwiches every night. Sometimes she will have a small portion of whatever we're having or (I hate to admit it!) sometimes I put some fishfingers or chicken nuggets in as its quick and she will pick at them.

I really want to improve all of our diets and have been looking on here for recipes for me and DH but am struggling with lighter meals for her. Any ideas?

When DD's had a main meal at lunchtime we tend to do soup, or scrambled egg or omlette with baked beans or veg. Or something like a ploughmans - you can use oatcakes instead of bread (they do some nice flavoured ones) with a bit of salad, cheese, ham?

Boiled egg and soldiers
Scrambled egg/omelette with toast
Jacket potato with different fillings
Homemade soup, make a big batch and freeze
Beans on toast
Quick pasta dishes with some green veg

But really if you all eat at the same time can't she have a portion of what you all have.

Omelette/frittata
Cheese on toast and salad
stir fry
soup and bread
savoury muffin if she likes those

Thank you for all the ideas. I don't like eggs but DD does so I think I need to find some nice omelette or frittata recipes and try that. Will definitely try making a nice soup now that its getting a bit colder and darker too!

TwentyTinyToes, we generally eat together although we sometimes change what we're having to suit DD (eg she doesn't really like spicy food or mince so we tend not to have those if she is eating with us) so by giving her something else a few nights it means we can eat something she wouldn't.

Keep the ideas coming!
