Steamed pudding

My DH loves syrup sponge and the like. I've never made one. So some daft questions!

  1. I can't the 2pt basin the recipe calls for. Can I just use a bigger one?
  2. How do I actually steam it? In a saucepan obviously but I'm guessing you need a lid on?
  3. How do you keep the bottom of the basin off the bottom of the saucepan so it doesn't burn? I've seen a saucer suggested but I think mine would crack!!

Last time I made one, I did it in the microwave, from a Be-Ro recipe.

Not sure about q1 but to steam in put a wodge (technical term) of foil in the bottom of the saucepan, place pudding on top, put boiling water in pan not too far up the sides, put lid on pan, keep water at simmer not boiling hard.

Oh and of recipe doesn't says me sure top of pudding is covered - layer of greaseproof paper then layer of foil is what I would do

I steam puddings, sticky toffee, christmas, spotted dick, lemon poppyseed and syrup using my slow cooker, cannot fault it at all. The rise perfectly and are lovely and moist. I use a pudding bowl (ceramic) fill half way up side of bowl with bowling water and cook on high for roughly 4 hours.

Hi op
I have tried steamed and microwaved: mw is unbelievable quick but the texture is a bit dry and there seems to be less flavour somehow? You don't achieve the moist, gorgeous texture that you get with steaming.
Have a look at the BBC food website - look for the instructions for Christmas pudding, there are step-by-step explanations, pics etc
Can't wait to bake the first pudding of the Autumn Smile
