Proud of my dd2, but need ideas!

My dd2 (10) announced today she wants to be a vegetarian. Well, pescatarian - but she doesn't eat lots of fish. I suppose that will change! I'm not in the tiniest bit surprised, she's very into animals, wants to be a zoologist (or preferably, wants to be David Attenborough!! Grin ), and she is choosing this partly for ethical reasons, but happily admits she "just doesn't want to eat animals).

I'm awfully proud of her for coming to this decision herself.

We eat veggie about once a week - veggie fajitas or stir fry but nothing much. Most evening meals are meat based, and it realise that this is therefore a chance for us all to eat more healthily and adventurously (also have ds, 12 and dd1, 14 and picky eater). Our big family meal of the week is Sunday dinner, which is always a roast. I'm just a bit short on interesting ideas, substitutes and making sure she gets enough protein etc as she's growing so fast right now. Most of my ideas are pretty heavy on carbs.

I need to eat more healthily and lose weight - I've decided to do the first month with her in solidarity.

Does anyone have recipes, resources, websites etc that would help?

First one is Rose Elliot Fast Fresh and Fabulous, second is Hugh fearnley-Whittingstall River Cottage Veg Everyday.

Not sure whether any of the recipes are online anywhere but you could try google. Anyway both books have a great variety of recipes (all veggie!) that I use over and over again. Not veggie but only have meat/fish based meals 3 times per week. DH is a big meat eater and will eat pretty much anything we make from these two books.

Hi, my DD2 did much the same for about a year, so I had much the same concerns! For everyday, make sure she has plenty of pulses and leafy greens- for Iron . Mine loved kidney beans and chickpeas so that was a relief. Delia Smith has a couple of really good vegetarian dishes which have become family favourites- Pancake Cannelloni with Spinach and 4 cheeses is one, and Broccoli Souffle is the other- I'm sure they will be on the net somewhere. I make a lot a pasta sauces with fresh veg ( as I have an allotment thats not a problem!) any combination which always has onions and tomatoes, but I add courgettes/ french beans/spinach, whatever is to hand - and if you are wanting meat, you can always add ham or bacon to your portion. I also make a lot of soups with butter beans, veg , lentils and bulk up with very small pasta shapes- serve with cheese and bread. And a real old fashioned favourite bubble and squeak with poached eggs on top ! I always do extra mash and greens during the week for that reason ( or add cheese if not eggs) There are a lot of Indian vegetarian dishes and they do not have to be spicy . Hope that helps! :)
