Beanburgers!

ds (15m) has been going through an awkward eating phase . One of the other June 05 Mums suggested beanburgers work well, but I can't find any recipes - can anyone help? TIA.

At uni we used to make really basic ones from a tin of baked beans (drained a bit), an egg, chilli powder and some flour!! Did the job and guess you could change the beans and add some tom puree?
DD1 is a really fussy eater and won't eat veg burgers but LOVES baked beans so you've put an idea in my head.

He ate some baked beans right enough, with home made beefburgers, but I hope beanburgers would give less smelly nappies . And get some veg into the picky sod!

Do you reckon they would make for nicer nappies??
We are veggie and DD2 still does terrible whiffers! Glad she was an early potty trainer that's for sure.

I don't know, laundrylover, but I have to say that mince seems to give just the worst nappies ever, and hoped nothing could be as bad!

I'm not sure bean burgers would make for less whiffy nappies, but if you want to have a go, there a couple of recipes here:-

Big Beany Burgers (makes 2 toddler portions)

2 teaspoons oil
1 small onion
1 small garlic clove, crushed
I teaspoon ground cumin
1 teaspoon ground coriander
10oz can kidney beans, drained and rinsed
A little flour

Heat half of the oil in a pan and gently fry the onion and garlic until lightly browned. Add the spices and cook for 1 minute.

Drain and rinse the beans, add to the onion mixture, and mash (or blitz briefly in a food processor). Divide the mixture in half, shape each half into a burger shape using floured hands.

Fry the burgers in the remaining oil for 3 - 4 mins each side, or until browned.

Bean and Feta Falafel (4 toddler portions)

10 oz broad beans
One onion, chopped
teaspoon ground cumin
a teaspoon ground coriander
4oz feta cheese, drained and chopped
1 tablespoon sunflower oil

Boil the broad beans for a few minutes, drain, then add to a food processor with the onion, spices and feta (or mash the ingredients in a bowl).

Divide the mixture into 12 portions, then press into oval patties between floured hands. Heat the oil in a frying pan and fry for 5 minutes until each side is golden.

Thanks, WWB. TBH, I'd settle for anything that my suddenly food-refusing toddler would deign to eat, stinky poos or not! I'll definitely have a go at one of those recipes
