Help! I need to find some healthy, freezable, non-dairy, non pasta one-pot recipes - any suggestions?

For DH to take to work. He likes pretty much anything but is allergic to dairy. Any ideas would be much appreciated.

Lentil and winter veg soup is always a winner. Especially in colder weather.

Thanks - I do a lot of pies (fish, cottage etc.) already but he wants more vegetables (he works long hours sitting down in a studio so he needs it to be as healthy as possible). Sorry, I should have been more specific.

I personally don't like lentils and beans etc. so I've never cooked them before but he does so I'd love to make him something with them in.

Can you freeze risotto then RTTH?

Ohhh lentil & veg soup rocks. I was gobsmacked, I've never tasted a soup as good. Kids loved it too.

Soften leeks and carrots and potato - all diced, then add a couple of handfuls of red lentils add a load of veg stock, and simmer for about 30 mins.

Massively, massively scrummy

well I do freeze risotto, shouldn't I? poss sometimes a little lax in this departmt but surely for a few wks even rice sd be okay?

this might meet with the wrath of mn, but have you seen that bird's eye and all the supermarkets sell little packs of frozen veggies that you can microwave and serve? they're really good, i think, because they require no prep whatsoever.

i understand that if your dh is going into work they'll have defrosted, but i wouldn't have thought that would be a problem, he'll just have to learn new cooking times. and he can have them with whatever he's eating. (if i'm in on my own i quite often just splash some soy over them or eat them in a packet miso soup made with some hot water).

anyway, i don't use them all the time but for those days when you want some vegetables but can't be bothered with the peeler i find them excellent. advert over...

You could try a moroccan style veg tagine. Boil up in small amount of water and then simmer big chunks of onion, carrots, caugette, potato, sweet potato, beans, peppers, squash or any other vegetable you want (but broccoli and cauliflower don't really work!) and garlic until they are all tender, then add a blended up tin of tomatoes and some cinnamon and cumin and chillie in whatever quantities suits you. You can also add chickpeas and a handful of raisins if you like. You can add stock cubes too. Cook down but not so much that it all turns yo mush. This is absolutely delicious and can be made in large batches so idea for freezing. Serve it with cous cous which can also be frozen. This is really healthy and my son's favourite meal.

DH's speciality is loosley named 'Spanish stew'

Fry some onions and garlic, add some diced chicken and brown. Chop a piece of black pudding up small and add it to the mix, cover (just) with water and add a drained can of chickpeas or any random pulse that is on special at Tesco that week . Add vegetables. Peppers, brocolli, celery and carrot work well, though anything that's going a bit soft in the fridge is worth a try. Spice it up with a bit of cumin, chilli and black pepper and leave to simmer. What should happen is the black pudding breaks down into a mush, making a deep rich sauce.

This is the sort of dish that improves with simmering on a low heat waiting for the man to come home, and freezes well too. I imagine it would be nice with seafood and/or tomatoes as well.

we have another spanish stew in our house.
fry onions, garlic, paprika and cayenne pepper, add lots of chickpeas, (then anything else you have lying around the house eg peppers, new potatoes) then add stock, a splash of white wine and a bay leaf and away you go. you can add chorizo too if you find a good one, and i often put spinach in it to finish. oh, and you add the juice of a lemon right at the very end. nearly forgot about that.
