and if you roast anything with enough garlic and some fennel it invariably tastes nice (cherry tomatoes, aubergines, mixed pepper, onion, courgette, fennel)

good in risotto.

slice quite thin, fry very gently in olive oil (can add butter too) for quite a while till cooked through and starting to blister up with toasty bits; squeeze on lots of lemon juice and keep sauteing to get more toasty. Always gets eaten, however much I do.

oh just remembered I think you can make courgette crisps too .. slimming recipe .. potato peel to peel slices and oven roast with oil / spray oil till crisp

My step-dad used cut them in half, scoop out the middle, stuff them with a mixture of mince (cooked in a spag bol type sauce) and rice, put them back together and bake them for about 20 mins until they were tender but not soggy - they were gorgeous.

Try this (I made it up one night and liked it so much I have made it ever since): fry courgette slices lightly in some olive oil to soften them (I use two small courgettes for two people), then add some lemon juice (I think I put in about half a small lemon) to bubble a little followed by a good handful of mint leaves (just heat enought to release the mint flavour, not to cook them). Turn off the heat and add cubes of feta cheese (about half a pack). Serve with couscous. Delicious ?

Chop onion and fry in olive oil ( gently) add thinly sliced ( and halved) courgette and loads of black pepper ... then toss over pasta and add grated parmesan...

I sometimes dice / slice and put in less oil and a drop of water just to cook the courgette ...

grate courgettes and potatoes and squeeze out the water. Add to whatever you fancy eg chopped mushrooms, cheese, herbs etc and then chuck in an egg. Shape into cakes and fry

I do like twiglett said, roast it with lots of veg, slat, garlic and also chilli. Then it is really nice layered with cheese or chicken, or put into toasted sandwichs/paninis with mozarella. I also grate it and make tortillas with it.

Slice courgette part way through, stuff with goats cheese and walnuts and raisins or blue cheese, whatever you fancy really. brush with olive oil, wrap in foils and bung on hot coals of bbq or bung in the oven.

Zucchinni (as we call it in AMerican) Bread !! Brings back memories from childhood

Makes 2 loaves, think i've converted everything
INGREDIENTS:
3 eggs
1 cup / 225 mlvegetable oil
2 cups / 450g white sugar
2 cups / 150g grated zucchini
2 teaspoons vanilla extract
1/2 cup / 60g chopped walnuts
1 teaspoon salt
1/4 teaspoon baking powder
3 cups / 345g all-purpose/plain flour
3 teaspoons ground cinnamon
1 teaspoon baking soda
DIRECTIONS:
Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans.
In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans.
Bake for 60 to 70 minutes, or until done.

I love them fried in olive oil with garlic, cumin and a bit of brown sugar. Also works for aubergines.

i have the nigella recipe for courgette and lime cake, apparently you cant taste courgette never tried it (kind of hoping someone else would and tell me if it was worth it) if you want
