I've made a huge chicken soup.......now what do I do with it?

Inspired by a thread on here, I've made a giant vat of chicken soup with the remains of the roast chicken from tea....however, at the moment, it is in a huge casserole pot.

Do you just put it in the fridge and reheat when needed (can you reheat it - it's got lots of chicken bits in it?) or can you put a bit in the freezer (does it freeze ok or is that a bad idea)?

Not sure our little fridge can fit the huge vat in it (prob should have thought of that earlier!)

if its clear you could probably condense it to make the quantity less then add water to it when reheating

Freeze, in portions (or not much larger) and then make sure you really heat it up thoroughly when serving.

A good way to do portion sizes is to line suitable bowls with freezer bags then fill with soup. Freeze until solid then remove bowls and tie off bags.

ooh v good freezing tip - would never have thought of that

maybe if I condense it first then do that, it might only take up one shelf!

To condense it just boil until the quantity reduces. You should end up with a stronger flavoured soup which can handle dilution when you defrost it.
