If you were having Balmoral Chicken as a main course.....

What would you have for starter and pudding?

I'm having some old school friends round next weekend for a catch up which I'm massively looking forward to, but having had a brainwave to have Balmoral chicken (chicken breast stuffed with haggis and wrapped in bacon) with roasted vegetables for a main course, I'm at a loss for starter and pudding ideas.

The whole thing is pretty casual, but when one of the girls cooked for us the last time, she set a very high bar with a beautiful beef Wellington.

Due to food preferences I can't serve pork, salmon or chocolate ....any ideas?

are you not already serving pork if main course is wrapped in bacon?

No, you're quite right to query it, but I'm ok using bacon or ham, it would be pork escalopes or similar that she wouldn't eat

That's quite a rich main, so I'd do something salady to start and something fruity to finish (homemade sorbet?)

It sounds quite an autumnal main so I'd go for something like pate to start (nice and simple) and for pudding I'd maybe go for a pie or crumble.

Salad of spinach, goats cheese and figs? Or spinach, dolcelatte and walnut? The leaves don't have to be spinach, I just like it a lot.

A fruit sorbet would be great, the chicken thing sounds delicious but heavy.

I'm liking the pate idea, it's not something I've made before so I'll need to suss out a recipe, I want something really yummy for pudding though, sorbet seems a bit bland....

Since you are using haggis what about Cranachan to keep a bit of a scottish theme going.
Really easy to make, quite light and refreshing and so tasty.

I always serve my cranachan with a small bit of shortbread too. Sainsbury's do those plastic boxes in their bakery of ones just the right size.

Envy at your guests though. I looooove balmoral chicken. My total favourite. Having at our wedding next year.
