It's a chutney emergency! Is this right?

Help!

Making green tomato pickle. Recipe has 3 tablespoons of cornflour but only calls for 7 minutes cooking time. It's still really liquidy.

Will it thicken in the jar due to the cornflour or should I cook it a bit longer? I have no idea but I really don't want to ruin it - there's A LOT.

Keep cooking it until it thickens. You could put a small cup of it in the fridge and see if it sets. Sometimes if I am not sure if jam or chutney is going to set I leave it overnight in the pan. If it sets I boil it up again and pot it. If it doesn't I keep cooking it until it thickens with jam you can add lemon juice or Certo (pectin). Remember to sterilise the jars and lids again and heat them in the oven.

Cooked it a few minutes longer and put it in jars. It got a bit thicker but looking at the jars it's still really wet. No idea what do do really!

I know that it is almost exactly 24hrs ago, but you can tip the mixture back in the pan and re boil it a bit more. You'd need to wash and sterilise jars again though.

Well I tried it and it's lovely! Tiny bit wetter than ideal but not enough to boil it all up again, though I wish I had trusted my judgement in the first place and cooked it more. Tastes just like Branston!
