I make a rich irish boiled fruit cake
It means basically putting all the fruit in tea and alcohol, simmer and and let them plump up in that then add the butter, sugar, treacle etc- when cool add the flour and eggs pop in the oven and when cooked and cooled pierce the top and drizzle whisky over it a couple of times a week !!

When I get home I'll find the proper recipe/quantities etc

The fruit NEVER falls to the bottom and it's as moist as can be ( not surprisingly !! )

I make a very similar recipe to Delia's but put the citrus zest and spices in with the brandy and dried fruit to make them extra scrummy. Last year I made my cake on Nov 18th and DD arrived on the 19th

I make the Delia rich glace fruit cake ( in teh xmas book) in mid november. Always go down well but I couldn't tell you what it's like as I hate fruit cake!
